Ingredients

Scale

Primary Ingredients

  • 23 firm, slightly underripe bananas
  • 12 teaspoons coconut oil or avocado oil
  • Pinch of salt
  • 1 teaspoon lemon juice

Optional Spices

  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon paprika
  • 1/2 teaspoon chili powder
  • Brown sugar (for sweet variation)
  • Garlic powder (for savory variation)
  • Lime juice (for chili lime variation)

Instructions

  1. Slice the Bananas Thinly: Peel the bananas and slice them uniformly into 1/8-inch thick rounds using a mandoline slicer or a sharp knife to ensure even crisping. Aim for thin, slender rounds without breaking them.
  2. Soak in Lemon Water: Place the banana slices in a bowl filled with cold water mixed with 1 teaspoon of lemon juice. Soak for about 10 minutes to prevent browning and maintain a golden color.
  3. Drain and Pat Dry: Remove the banana slices from the lemon water and carefully pat them dry with kitchen towels to eliminate excess moisture, which is crucial for crispiness.
  4. Lightly Oil and Season: Toss the banana slices with 1-2 teaspoons of your chosen oil to lightly coat each piece. Sprinkle with salt and any optional spices evenly to enhance flavor.
  5. Arrange in the Air Fryer Basket: Lay the banana slices in a single layer in the air fryer basket, avoiding overlap to ensure optimal airflow and even cooking. Cook in batches if necessary.
  6. Air Fry at 350°F: Cook the banana slices at 350°F (175°C) for 10-15 minutes, shaking or flipping the chips halfway through to promote uniform crispness. Monitor closely near the end to prevent burning.
  7. Cool and Store: Remove the chips once golden and crisp. Let them cool on a wire rack to firm up further before serving or storing in an airtight container for up to a week.

Notes

  • Use a slicer for uniform thickness to ensure even cooking.
  • Do not overcrowd the air fryer basket; cook in batches if needed.
  • Adjust cooking time based on banana ripeness; riper bananas cook faster.
  • Cool chips on a wire rack to prevent sogginess.
  • For delicate spices, add them immediately after cooking for best flavor.
