Angel Chicken & Rice is a simple, comforting dish combining tender, perfectly cooked chicken with fluffy rice and subtle seasonings. Ideal for quick weeknight dinners, it offers a nourishing, satisfying meal that’s easy to prepare, versatile to customize, and keeps well as leftovers, making it a wholesome favorite for any recipe collection.

Ingredients

Main Ingredients

  • Chicken thighs or breasts (skinless, boneless) – 1.5 lbs (about 4-5 pieces)
  • Long-grain white rice – 1 cup
  • Garlic cloves – 3, minced
  • Chicken broth – 2 cups
  • Olive oil or butter – 2 tbsp
  • Onion – 1 medium, finely chopped
  • Salt – to taste (about 1 tsp)
  • Black pepper – to taste (about ½ tsp)

Optional Herbs & Variations

  • Fresh thyme or parsley – 2 tbsp, chopped
  • Red pepper flakes or hot sauce – to taste, for spicy kick
  • Chopped bell peppers, peas, or carrots – ½ cup for added vegetables
  • Brown rice (as a substitute) – 1 cup
  • Cauliflower rice (as a low-carb substitute) – 1 cup
  • Fresh basil or cilantro – 2 tbsp, chopped

Instructions

  1. Prepare the Ingredients: Rinse the rice thoroughly under cold water until the water runs clear to remove excess starch for fluffy grains. Pat the chicken dry and season both sides lightly with salt and pepper. Mince the garlic and finely chop the onion to ensure even cooking.
  2. Brown the Chicken: Heat olive oil or butter in a large skillet or sauté pan over medium-high heat. Add the chicken pieces and cook for 5-6 minutes per side until golden brown and cooked through. Remove chicken from the pan and set aside.
  3. Sauté the Aromatics: Reduce the heat to medium. Add the chopped onion and minced garlic to the same pan. Stir frequently and cook for 3-4 minutes until soft and fragrant, forming a flavorful base for the rice.
  4. Cook the Rice: Stir the rinsed rice into the pan with the onions and garlic, coating the grains in oil for 1-2 minutes. Pour in the chicken broth, scraping up any browned bits from the pan bottom for extra flavor. Bring the mixture to a gentle simmer.
  5. Combine and Simmer: Place the browned chicken pieces on top of the rice. Cover the pan with a tight-fitting lid and reduce the heat to low. Allow to cook gently for 15-20 minutes until the rice is tender and chicken is juicy, infusing its flavors into the rice.
  6. Finish and Serve: Remove from heat and fluff the rice gently with a fork. Sprinkle chopped fresh herbs on top if using. Adjust seasoning with salt and pepper as needed. Serve warm for a delightful meal.

Notes

  • Use bone-in chicken thighs for deeper flavor.
  • Rinsing rice prevents it from becoming sticky or gummy.
  • Keep the pan covered during cooking to retain steam and moisture.
  • Let the dish rest covered off the heat for 5 minutes before serving to improve texture.
  • Season gradually and taste as you cook to avoid over-seasoning.
