Instructions

  1. Prepare the Potatoes: Start by peeling the potatoes if you prefer, though leaving the skin on adds texture and nutrition. Cut them into uniform chunks, roughly 1 to 1.5 inches, so they cook evenly. Rinse under cold water and pat dry to remove excess starch, which helps crisping.
  2. Mix the Marinade: In a large bowl, combine olive oil, fresh lemon juice, minced garlic, dried oregano, salt, and pepper. Whisk these ingredients thoroughly to create a well-blended marinade that will coat every potato piece beautifully.
