Ingredients

Scale

Main Ingredients

  • 1 medium green cabbage, thinly sliced
  • 1 large onion, diced
  • 23 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon smoked paprika
  • 2 medium carrots, diced
  • 3 cups vegetable or beef broth
  • Salt, to taste
  • Black pepper, to taste

Optional Ingredients

  • 1/2 lb ground meat (beef or pork), cooked
  • Potatoes or mushrooms (for vegetarian variation)
  • Cayenne pepper or chili flakes (for spicy kick)
  • Smoked sausage or liquid smoke (for smokier flavor)
  • Zucchini or bell peppers (for low-carb option)
  • Fresh thyme, bay leaves, or parsley (for herb enhancements)

Instructions

  1. Prep Your Ingredients: Thinly slice the cabbage, dice the onions and carrots, and mince the garlic. If using ground meat, brown it in the pan to lock in juices and deepen flavor.
  2. Sauté Onions and Garlic: Heat a little oil in a large pot over medium heat. Add onions and cook until translucent and fragrant (about 3-4 minutes). Add garlic and sauté for another minute, avoiding burning.
  3. Cook the Cabbage and Carrots: Add the sliced cabbage and carrots to the pot. Stir to combine with onions and garlic. Let soften for 5-7 minutes, so cabbage wilts but maintains some texture.
  4. Add Spices and Tomato Paste: Stir in smoked paprika, salt, and pepper. Add tomato paste and mix well to coat the vegetables evenly.
  5. Pour in Broth and Simmer: Pour enough vegetable or beef broth to just cover the cabbage. Reduce heat and simmer for about 15 minutes, allowing flavors to meld and cabbage to become tender but slightly firm.
  6. Final Adjustments: Taste and adjust seasoning if needed. For thicker sauce, cook uncovered a few more minutes. Stir in cooked ground meat if using, and warm through before serving.

Notes

  • Choose a fresh, firm cabbage for best texture and flavor.
  • Do not overcook the cabbage to avoid mushiness; keep it slightly firm.
  • Caramelizing onions adds natural sweetness and depth to the dish.
  • Smoked paprika is a key ingredient for characteristic warmth and complexity.
  • Simmer gently over low heat for optimal flavor development.
