			Proteins
- 12 oz Cajun-seasoned chicken sausage, sliced into bite-sized pieces
Pasta
- 8 oz fettuccine or linguine (or any preferred long pasta)
Sauce
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 2 tablespoons butter
- 3 cloves garlic, finely minced
- 1 teaspoon Cajun seasoning (adjust to taste)
- Salt and freshly ground black pepper, to taste
Garnish
- 2 tablespoons fresh parsley, chopped
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil. Cook your pasta according to package instructions until al dente. Drain, reserving about ½ cup of the pasta water, then set aside while you prepare the sauce.
- Brown the Cajun Chicken Sausage: Slice the Cajun chicken sausage into bite-sized pieces. Heat a large skillet over medium heat and cook the sausage until nicely browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
- Make the Alfredo Sauce: In the same skillet, melt butter over medium heat. Add finely minced garlic and sauté until fragrant, about 1 minute. Pour in heavy cream and bring it to a gentle simmer, stirring occasionally until it starts to thicken.
- Add Cheese and Seasoning: Lower the heat and stir in the freshly grated Parmesan cheese, stirring continuously until melted and smooth. Sprinkle in Cajun seasoning for an extra layer of flavor, then season with salt and pepper to taste.
- Combine Everything: Return the cooked Cajun chicken sausage to the skillet and toss to coat in the sauce. Add the cooked pasta and mix well, adding reserved pasta water a little at a time if the sauce needs loosening. Finish by sprinkling chopped fresh parsley on top.
Notes
- Use fresh Parmesan cheese for the best melt and flavor.
- Cook pasta al dente to avoid mushiness when combined with the sauce.
- Reserve pasta water to adjust sauce consistency without thinning it too much.
- Adjust Cajun seasoning according to spice preference.
- Simmer the cream gently to prevent curdling or burning.
