Instructions

  1. Prepare the Dough: Mix the warm water, sugar, and yeast in a large bowl. Let it sit for 5-10 minutes until frothy. Add flour, salt, and olive oil, then knead until a soft, elastic dough forms. Cover and let rise in a warm place for about 1 hour or until doubled in size.
  2. Shape the Knots: Punch down the risen dough and divide into equal portions. Roll each portion into a small rope, then wrap around your finger to form a knot. Tuck the ends securely to hold the shape.
  3. Add the Cheese Filling: Place a small cube or generous pinch of mozzarella in the center before sealing each knot. Pinch the dough tightly around the cheese to fully enclose it, preventing leakage during baking.
  4. Bake and Brush with Garlic Butter: Arrange knots on a parchment-lined baking tray. Bake at 375°F (190°C) for 15-18 minutes until golden brown. Meanwhile, melt butter with minced garlic and chopped parsley. Brush the hot knots generously with this garlic butter as soon as they come out of the oven.
