Ingredients

Scale

Main Ingredients

  • 1 lb ground beef (lean or regular)
  • 34 medium potatoes (Russet or Yukon Gold), peeled and cubed
  • 1 cup shredded cheddar cheese (or mix with mozzarella or Monterey Jack)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup sour cream
  • 1/4 cup beef broth
  • 1/2 cup breadcrumbs or crushed crackers
  • Salt and pepper, to taste
  • 2 tbsp butter or oil (for sautéing)

Instructions

  1. Prepare the Ground Beef Mixture: Heat butter or oil in a skillet over medium heat. Add diced onion and minced garlic, cooking until softened. Add the ground beef and cook until browned, seasoning with salt and pepper as it cooks. Drain excess fat and set aside.
  2. Cook the Potatoes: Peel and cube the potatoes. Boil in salted water for 10-12 minutes until just tender but not falling apart. Drain well and set aside.
  3. Mix the Creamy Layer: In a bowl, combine sour cream with a handful of shredded cheese and a splash of beef broth. This mixture will add moisture and cheesy creaminess to the casserole.
  4. Assemble the Casserole: Grease a casserole dish. Start with a layer of cooked potatoes, then spread half of the ground beef mixture over the potatoes. Add dollops of the creamy cheese mixture. Repeat the layers once more, then top with the remaining shredded cheese and breadcrumbs or crushed crackers for a crispy finish.
  5. Bake the Casserole: Preheat oven to 375°F (190°C). Cover the casserole with foil and bake for 25 minutes. Remove the foil and bake an additional 15 minutes until the cheese is bubbly and the topping is golden brown.

Notes

  • Don’t overcook the potatoes; they should hold their shape to avoid a mushy casserole.
  • Use sharp cheddar cheese for enhanced flavor and perfect melting.
  • Let the casserole rest for 5-10 minutes after baking to set and make slicing easier.
  • Layer ingredients evenly to ensure a balanced bite every time.
  • Customize the topping by adding crushed cornflakes or fried onions for extra crunch.
