Instructions

  1. Prepare the Ingredients: Season diced chicken breast with salt and pepper. Rinse fresh spinach thoroughly and mince the garlic cloves.
  2. Cook the Pasta: Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain, reserving 1 cup of pasta water, and set pasta aside.
  3. Sauté the Chicken: Heat olive oil in a large skillet over medium heat. Add the chicken pieces and cook for 5 to 7 minutes until golden brown and cooked through. Remove chicken from the skillet and keep warm.
  4. Cook the Garlic and Spinach: In the same skillet, add more olive oil if needed, then sauté minced garlic for about 1 minute until fragrant but not browned. Add fresh spinach and cook just until wilted and bright green.
  5. Make the Creamy Sauce: Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese until melted and the sauce thickens slightly. Optionally, add chili flakes for heat.
  6. Combine Pasta, Chicken, and Sauce: Return cooked chicken to the skillet and add the drained pasta. Toss everything together, adding reserved pasta water gradually to loosen the sauce as needed. Adjust seasoning with salt and pepper to taste.
  7. Serve and Enjoy: Plate the Chicken and Spinach Pasta immediately, garnish with extra Parmesan, herbs, or black pepper as desired, and serve warm.
