Instructions

  1. Prepare the biscuits: Break the digestive biscuits into small, varied pieces in a large mixing bowl, aiming for a combination of small chunks and crumbs to mimic the texture of salami.
  2. Melt the chocolate mixture: In a saucepan over low heat, gently melt the butter and cocoa powder together until smooth. Stir in powdered sugar and vanilla extract, mixing thoroughly to create a glossy chocolate mixture.
  3. Combine ingredients: Add the melted chocolate mixture to the chopped biscuits. Mix in the chopped nuts and dried fruits if using. If adding eggs, whisk them first then quickly mix into the bowl. Stir thoroughly to coat all ingredients evenly with chocolate.
  4. Shape the salami: Transfer the mixture onto a large piece of parchment paper. Using your hands, shape it tightly into a log resembling traditional salami. Wrap the log with parchment paper and twist the ends securely to hold the shape.
