Instructions

  1. Prepare the Ingredients: Season the chicken with salt, pepper, and any preferred seasonings. Chop the onion and mince the garlic. Break the spaghetti noodles in half to fit in the crockpot.
  2. Layer in the Crockpot: Place the seasoned chicken breasts or thighs at the bottom of the crockpot. Add the chopped onion, minced garlic, canned tomatoes (or Rotel), chicken broth, and seasonings on top. Spread cubed cream cheese evenly across the top.
  3. Slow Cook Until Tender: Cook on low for 5 to 6 hours or on high for 3 to 4 hours, until the chicken is tender and can be shredded easily with a fork.
  4. Add Spaghetti and Cheese: Shred the cooked chicken inside the crockpot. Stir in the uncooked spaghetti noodles, cover, and cook for an additional 30 to 45 minutes until noodles are softened. Add shredded cheddar cheese and mix until fully melted and creamy.
