Crock Pot Pork Chops and Potatoes

A simple and flavorful Crock Pot Pork Chops and Potatoes recipe perfect for easy weeknight dinners. Tender, juicy pork chops are slow-cooked with baby potatoes, onions, garlic, and herbs in a savory broth, creating a one-pot meal with rich, comforting flavors and minimal effort.

Ingredients

Scale

Meat

  • 4 bone-in or boneless pork chops

Vegetables

  • 1.5 pounds baby potatoes (halved if large)
  • 1 medium onion, thinly sliced
  • 3 cloves garlic, minced
  • Optional Add-in: 2 carrots sliced or 1 cup green beans

Liquids and Oils

  • 1 cup chicken broth
  • 2 tablespoons olive oil

Herbs and Seasonings

  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the Ingredients: Wash the baby potatoes and cut any larger ones in half to ensure even cooking. Thinly slice the onion and mince the garlic. Pat the pork chops dry with paper towels to help with browning.
  2. Brown the Pork Chops: Heat olive oil in a skillet over medium-high heat. Quickly brown each side of the pork chops until golden, about 2 minutes per side. This step locks in juices and adds flavorful color.
  3. Layer in the Crock Pot: Place the potatoes and onions at the bottom of the crock pot. Layer the browned pork chops on top. Sprinkle minced garlic, dried thyme, dried rosemary, salt, and pepper evenly over all the ingredients.
  4. Add Broth and Cook: Pour the chicken broth gently over the meat and vegetables to keep everything moist and tender. Cover the crock pot and cook on low for 6-7 hours or on high for 3-4 hours until pork chops and potatoes are perfectly tender.
  5. Serve and Enjoy: Check seasoning before serving and adjust salt and pepper if needed. For a richer sauce, stir in a little butter or a splash of cream before plating. Garnish with fresh chopped parsley or chives if desired.

Notes

  • Choose thicker pork chops for juicier results.
  • Browning pork chops before slow cooking intensifies flavor and improves texture.
  • Use just enough broth to cover the bottom of the crock pot to avoid watery potatoes or soggy meat.
  • Fresh herbs can be added near the end of cooking for brighter flavor.
  • Place potatoes at the bottom as they require longer cooking than pork chops.
