  • 2 cups enchilada or red sauce
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 ½ cups cooked rice
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Prepare the Filling: Cook your chosen protein in a skillet over medium heat with diced onions and minced garlic. Season the mixture with cumin, chili powder, salt, pepper, and paprika. Once the protein is cooked through, stir in cooked rice and refried beans until everything is warmed and well combined.
  2. Warm the Tortillas: Heat the flour tortillas individually in a dry skillet or microwave until soft and pliable, which helps prevent tearing when rolling the burritos.
  3. Assemble the Burritos: Spoon a generous amount of the filling onto the center of each tortilla. Sprinkle the filling with shredded Mexican cheese, then fold in the sides and roll up tightly to fully enclose the filling.
  4. Add Sauce and Bake: Place each rolled burrito seam side down in a baking dish. Pour the enchilada or red sauce evenly over the top of the burritos and sprinkle with the remaining shredded cheese. Bake in a preheated oven at 350°F (175°C) for 15-20 minutes, or until the sauce is bubbly and the cheese is golden.
