Vegetables

  • 1/2 cup chopped bell peppers
  • 1/2 cup chopped spinach or other leafy greens
  • 1/2 cup chopped mushrooms
  • Optional: diced tomatoes or jalapeños for variations

Optional Proteins

  • 1/4 cup cooked and chopped bacon, ham, or sausage

Instructions

  1. Prepare your ingredients: Chop all vegetables and optional meats into small, uniform pieces. This ensures even cooking and makes the Egg Bites easy to eat.
  2. Whisk the eggs and dairy: In a mixing bowl, beat the eggs with milk or cream, salt, pepper, and your choice of fresh herbs until the mixture is well combined and fluffy.
  3. Add the mix-ins: Gently fold in the shredded cheese, chopped veggies, and meats into the egg mixture to distribute evenly without over-mixing.
  4. Pour into molds: Grease a silicone muffin pan or baking tin, then fill each cavity about three-quarters full to leave space for the egg bites to rise while baking.
