Ingredients
Scale
Egg Base
- 6 large eggs
- 1/4 cup milk or cream
- Salt, to taste
- Freshly ground black pepper, to taste
- Chopped fresh herbs (chives, parsley, dill, basil, or rosemary), about 1 tablespoon
Cheese
- 1/2 cup shredded cheddar or mozzarella cheese (or your preferred cheese like pepper jack, goat cheese, feta, or parmesan)
Vegetables
- 1/2 cup chopped bell peppers
- 1/2 cup chopped spinach or other leafy greens
- 1/2 cup chopped mushrooms
- Optional: diced tomatoes or jalapeños for variations
Optional Proteins
- 1/4 cup cooked and chopped bacon, ham, or sausage
- Alternative low-carb protein options: smoked salmon or avocado slices
Instructions
- Prepare your ingredients: Chop all vegetables and optional meats into small, uniform pieces. This ensures even cooking and makes the Egg Bites easy to eat.
- Whisk the eggs and dairy: In a mixing bowl, beat the eggs with milk or cream, salt, pepper, and your choice of fresh herbs until the mixture is well combined and fluffy.
- Add the mix-ins: Gently fold in the shredded cheese, chopped veggies, and meats into the egg mixture to distribute evenly without over-mixing.
- Pour into molds: Grease a silicone muffin pan or baking tin, then fill each cavity about three-quarters full to leave space for the egg bites to rise while baking.
- Bake until set: Place the tray in a preheated oven at 325°F (160°C) and bake for 15-20 minutes until the egg bites are puffed up, cooked through, and still moist.
- Cool and enjoy: Let the egg bites cool slightly before removing from the molds. Serve warm or allow to cool completely if storing for later.
Notes
- Do not overfill the muffin cups to prevent overflow and ensure even cooking.
- Silicone molds are recommended to easily remove egg bites without breaking them.
- Bake at a lower temperature for creamier, custard-like texture.
- Fold ingredients gently to avoid rubbery egg bites.
- Cool completely before storing to prevent condensation and sogginess.
