Ingredients

Scale

Protein and Eggs

  • 8 oz ribeye or sirloin steak, tender cut
  • 2 large eggs, beaten

Rice and Vegetables

  • 3 cups cooked day-old rice
  • 1/2 cup diced carrots
  • 1/2 cup peas (fresh or frozen)
  • 1/4 cup chopped green onions

Flavorings and Seasonings

  • 3 cloves garlic, minced
  • 3 tablespoons butter, divided
  • 2 tablespoons soy sauce
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the Steak: Season the steak generously with salt and pepper. Heat a skillet over medium-high heat and sear the steak in a little oil for about 3-4 minutes per side, depending on thickness. Once cooked to your liking, remove it from the pan and let it rest before slicing thinly against the grain.
  2. Scramble the Eggs: In the same skillet, melt a small knob of butter and scramble the beaten eggs quickly until just cooked but still soft. Transfer the eggs to a plate and set aside.
  3. Sauté the Garlic and Vegetables: Add more butter to the skillet. Toss in the minced garlic and sauté until fragrant, about 30 seconds, avoiding burning. Add diced carrots and peas, cooking until tender but still crisp, around 2-3 minutes.
  4. Combine Rice and Seasonings: Add the cold cooked rice to the pan, breaking up any clumps. Stir-fry everything together with soy sauce, ensuring the rice absorbs all the garlicky butter goodness and veggies are evenly mixed.
  5. Finish with Steak and Eggs: Return the sliced steak and scrambled eggs to the skillet. Toss gently to combine and warm through, adjust seasoning with salt and pepper, and sprinkle chopped green onions on top before serving.

Notes

  • Use day-old rice to achieve the perfect fried rice texture and prevent sogginess.
  • Avoid overcrowding the pan; cook in batches if needed for even sautéing and caramelization.
  • Let the steak rest after cooking to keep it juicy and tender when sliced.
  • Use fresh minced garlic for the best aroma and vibrant flavor.
  • Stir-fry all ingredients on high heat quickly to get slight crispness and optimal flavor.
