Instructions

  1. Prepare the Marinade: In a bowl, mix the teriyaki sauce, olive oil, salt, and pepper. Add the sliced pineapple to the marinade and let the flavors meld together while preparing the chicken.
  2. Marinate the Chicken: Place the chicken breasts in the marinade, coating them thoroughly. Let them sit for at least 30 minutes (or overnight in the refrigerator for best flavor and tenderness).
  3. Preheat the Grill: Heat your grill or grill pan to medium-high. Brush the grates with oil to prevent sticking and prepare to cook the chicken and pineapple.
  4. Grill Chicken and Pineapple: Grill the chicken breasts for 5-7 minutes per side, until fully cooked and marked. Then grill the pineapple slices for 2-3 minutes per side until caramelized.
  5. Toast the Buns and Assemble: Lightly brush the buns with olive oil and toast them on the grill until golden brown. On the bottom bun, layer lettuce, grilled chicken, pineapple, cheese, and red onion rings. Top with the bun and serve immediately.
