Ingredients

Scale

Fruits

  • 3 overripe bananas, mashed
  • 1 cup canned crushed pineapple (with juice)

Dry Ingredients

  • 2 cups all-purpose flour (or gluten-free flour blend for GF version)
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt

Wet Ingredients

  • 2 large eggs
  • 1/2 cup vegetable oil (or coconut oil for vegan)
  • 1 teaspoon vanilla extract
  • 1 cup brown sugar, packed

Optional Add-ins

  • 1/2 cup chopped pecans or walnuts (optional)
  • 1/2 cup semi-sweet chocolate chips (optional)

Instructions

  1. Prepare the Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Stir well to ensure the leavening agents and spices are evenly distributed.
  2. Mix the Wet Ingredients: In a separate bowl, whisk together the eggs, vegetable oil, and vanilla extract until blended. Then stir in the mashed bananas, crushed pineapple with its juice, and brown sugar until smooth and well combined.
  3. Combine Wet and Dry Mixtures: Gradually fold the dry ingredient mixture into the wet mixture. Stir gently to blend everything together without overmixing, aiming for a thick but smooth batter.
  4. Add Nuts or Optional Ingredients: Fold in chopped pecans or walnuts and/or chocolate chips evenly, if using, to add texture and bursts of flavor throughout the bread.
  5. Bake to Perfection: Pour the batter into a greased loaf pan and bake in a preheated oven at 350°F (175°C) for 55-65 minutes. Check doneness by inserting a toothpick into the center; it should come out clean. Allow the bread to cool completely before slicing and serving.

Notes

  • Use overripe bananas and pineapple in their own juice for best moisture and sweetness.
  • Do not overmix the batter to avoid tough bread; stir just until combined.
  • Measure flour by spooning into measuring cups and leveling off to prevent dense bread.
  • Start checking the bread for doneness around 50 minutes to prevent overbaking.
  • Allow the bread to cool completely before slicing to maintain structure and flavor.
