Ingredients

Scale

Chicken

  • 2 boneless, skinless chicken breasts
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons olive oil (divided)

Tomato Herb Topping

  • 3 cups fresh ripe tomatoes, chopped
  • 3 garlic cloves, minced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh parsley, chopped
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon lemon juice
  • Salt and black pepper, to taste

Instructions

  1. Prepare the Chicken: Season the chicken breasts with salt, pepper, and 1 tablespoon of olive oil. Heat a skillet over medium-high heat and cook the chicken for 5-6 minutes per side until golden brown and cooked through (internal temperature 165°F). Remove the chicken and let it rest while preparing the topping.
  2. Make the Tomato Herb Mixture: In the same skillet, add the remaining 1 tablespoon of olive oil if needed and sauté the minced garlic for about 30 seconds until fragrant. Add the chopped tomatoes and cook for 5-7 minutes until they soften and begin to break down into a sauce. Stir in the fresh basil, parsley, thyme, and lemon juice. Season with salt and pepper to taste.
  3. Combine and Serve: Slice the rested chicken breasts and spoon the vibrant tomato herb topping over each piece. Garnish with extra fresh herbs and serve immediately for a fresh and flavorful meal.

Notes

  • Use ripe tomatoes for the sweetest, juiciest topping.
  • Do not overcook the chicken to keep it tender and juicy; use a meat thermometer to ensure it reaches 165°F.
  • Always use fresh herbs instead of dried for best flavor.
  • Let the chicken rest after cooking to retain its juices.
  • Adjust salt and lemon juice in the topping last according to taste.
