Instructions

  1. Bloom the Gelatin: Sprinkle the gelatin over 1/2 cup of cold water in a large bowl. Let it sit undisturbed for about 10 minutes to allow the gelatin to absorb the water and soften.
  2. Prepare the Sugar Syrup: In a medium saucepan, combine the granulated sugar, light corn syrup, salt, and the remaining 1/2 cup of water. Heat the mixture over medium-high heat, stirring gently until the sugar dissolves. Attach a candy thermometer and allow the syrup to boil without stirring until it reaches 240°F (115°C), the soft-ball stage.
  3. Mix Gelatin and Syrup: Remove the syrup from heat and slowly pour the hot sugar syrup into the bloomed gelatin while whisking continuously using a stand mixer or hand mixer on low speed.
  4. Beat Until Fluffy: Increase the speed to high and beat the mixture for about 10 minutes until it becomes thick, white, fluffy, and forms stiff peaks.
  5. Add Flavor and Pour into Pan: Add the vanilla extract and mix briefly until incorporated. Pour the mixture into a greased or powdered sugar/cornstarch-dusted pan and spread evenly.
  6. Let Set and Cut: Allow the marshmallows to set at room temperature for at least 4 hours or preferably overnight. Dust a knife with powdered sugar and cut the marshmallows into squares or desired shapes.
