Primary Ingredients

  • 1 cup raw pistachios (unsalted)
  • 1/2 cup powdered sugar
  • 1/4 cup heavy cream
  • 2 tablespoons vegetable oil
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Prepare the Pistachios: Shell the pistachios if necessary, then gently toast them in a dry pan over medium heat until fragrant but not burnt. This intensifies their flavor and brings out the natural oils.
  2. Grind the Pistachios: Transfer the toasted pistachios to a food processor and pulse until they form a fine crumb, taking care not to overblend into pistachio butter yet.
  3. Add Sweeteners and Liquids: Add powdered sugar, a pinch of salt, and vanilla extract to the ground pistachios. Slowly pour in the heavy cream and vegetable oil as you continue to blend, working towards a smooth, spreadable consistency.
  4. Blend Until Creamy: Process the mixture for several minutes, scraping down the sides as needed, until the cream is thick, rich, velvety, and free of lumps or graininess.
  5. Taste and Adjust: Taste the cream and add more powdered sugar for sweetness or additional cream/oil to soften the texture until it reaches your desired balance.

Notes

  • Use fresh, raw pistachios for best flavor and vibrant green color.
  • Pulse less for chunkier texture or blend longer for a smooth cream.
  • Powdered sugar dissolves better for a silky texture compared to granulated sugar.
  • Store the cream in an airtight container in the refrigerator for up to one week.
  • Vegetable or light olive oil recommended to keep flavor balanced.
  • For dairy-free version, substitute heavy cream with coconut cream.
  • To add texture, fold in chopped pistachios at the end of blending.
