Instructions

  1. Prepare the Potatoes: Wash and scrub the russet potatoes thoroughly. Pierce them all over with a fork and bake at 400°F (204°C) for about 45-50 minutes until tender when pierced with a fork.
  2. Cool and Cut: Let the baked potatoes cool slightly, then cut each potato in half lengthwise. Carefully scoop out most of the potato flesh, leaving about 1/4 inch thickness inside the skin for structure.
  3. Coat and Bake Skins: Brush the potato skins lightly with olive oil and season with salt and pepper. Place them skin-side down on a baking sheet and bake for another 10 minutes until they start to crisp up.
  4. Add Cheese and Bacon: Flip the skins over and fill each with shredded cheddar cheese and crumbled crispy bacon. Bake for an additional 5-7 minutes until the cheese is melted and bubbly.
