Liquids and Binders

  • 2 cups warm chicken broth
  • 2 large eggs, whisked
  • 3 tablespoons butter

Instructions

  1. Prepare the Cornbread: Bake your cornbread a day ahead or several hours before making the dressing to let it dry out slightly. Once cooled, crumble it into medium-sized pieces in a large mixing bowl.
  2. Sauté the Vegetables and Herbs: Melt butter in a large skillet over medium heat. Add finely chopped celery and onions, sautéing until softened and translucent. Stir in chopped fresh sage and thyme until fragrant.
  3. Combine Ingredients: Transfer the sautéed vegetables and herbs into the bowl with cornbread. In a separate bowl, whisk together eggs and warm chicken broth. Slowly pour the liquid mixture into the cornbread mixture, folding gently to combine. Season with salt and pepper to taste.
  4. Bake Until Golden: Preheat oven to 350°F (175°C). Butter a casserole dish and transfer the dressing mixture into it, smoothing the top lightly. Bake uncovered for about 45 minutes, or until golden brown on top and heated through.
  5. Let It Rest: Remove from oven and let the dressing rest for 10 minutes before serving to allow flavors to meld and texture to firm up.

  • Use slightly stale or day-old cornbread for best broth absorption without becoming mushy.
  • Homemade chicken broth will enhance the flavor more than store-bought.
