Description

This Matcha Green Tea Cheesecake combines the earthy, vibrant flavor of matcha with the rich and creamy texture of classic cheesecake. Visually stunning and perfectly balanced in sweetness with a slight bitterness from matcha, it is easy to make and ideal for any occasion, from casual family desserts to elegant dinner parties.

Ingredients

Scale

Crust

  • 1 1/2 cups graham cracker crumbs
  • 6 tablespoons melted butter

Filling

  • 24 oz (680 g) cream cheese, softened
  • 3/4 cup granulated sugar
  • 2 tablespoons matcha powder, sifted
  • 3 large eggs
  • 1/2 cup sour cream or heavy cream
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the Crust: Crush graham crackers into fine crumbs and combine with melted butter until the mixture holds together. Press evenly into the base of a springform pan and chill in the refrigerator to firm up while you prepare the filling.
  2. Mix the Filling: Beat softened cream cheese until smooth and creamy. Gradually add sugar, mixing continuously. Sift the matcha powder to avoid lumps and add to the batter. Add eggs one at a time, mixing well after each. Fold in sour cream or heavy cream and vanilla extract to achieve a luscious texture and balanced flavor.
  3. Bake It Right: Pour the green filling over the chilled crust and smooth the top gently. Bake in a preheated oven at a low temperature (about 325°F / 160°C) using a water bath to keep it moist and crack-free. Avoid opening the oven door during baking.
  4. Cool and Chill: Allow the cheesecake to cool gradually in the oven with the door slightly open. After reaching room temperature, refrigerate for at least 4 hours or overnight to set completely, enhancing flavor and texture.

Notes

  • Sift the matcha powder before adding to avoid clumps and ensure smooth texture.
  • Use room temperature cream cheese and eggs for a silky batter.
  • Mix gently to prevent excess air bubbles that cause cracks.
  • Wrap the springform pan in foil and use a water bath during baking for moisture and to prevent cracks.
  • Chill the cheesecake thoroughly overnight for best flavor and texture.
