Instructions

  2. Cook the Meat: In a large ovenproof skillet over medium heat, cook the bacon or sausage until browned and crisp. Remove the meat and set aside, leaving the rendered fat in the pan for extra flavor.
  3. Sauté Vegetables: Add diced onions and bell peppers to the skillet and sauté until softened and slightly caramelized, absorbing the delicious meaty fat.
  4. Brown the Potatoes: Return the parboiled potatoes to the pan, season with salt, pepper, garlic powder, and smoked paprika. Cook over medium-high heat until crispy and golden brown on all sides, turning occasionally to brown evenly.
