			Apple Filling
- 3 medium firm, tart apples (such as Granny Smith), peeled, cored, and diced
- 2 tablespoons granulated sugar
- 1 tablespoon brown sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon lemon juice
- 1 tablespoon melted butter
Crust and Topping
- 1 package store-bought puff pastry sheets (thawed according to package instructions)
- 1 egg (beaten, for egg wash)
- Additional butter for brushing (optional)
Instructions
- Prep the Filling: Peel, core, and dice the apples into small cubes. In a mixing bowl, toss them with granulated sugar, brown sugar, ground cinnamon, ground nutmeg, lemon juice, and melted butter. Let the mixture sit for 10 minutes to blend flavors and soften the apples slightly.
- Prepare the Puff Pastry: Thaw puff pastry sheets following package instructions. On a lightly floured surface, gently roll them out and cut into small circles or squares sized to fit into your mini pie pan or muffin tin.
- Assemble the Pies: Place the pastry pieces into the mini muffin pan or pie molds, pressing gently to fit the shape. Spoon the apple filling into each crust generously but without overflowing. If desired, cover each with a second piece of pastry as a top crust, pressing edges to seal firmly.
- Apply Egg Wash and Vent: Brush the tops with the beaten egg wash to achieve a shiny, golden crust when baked. If a top crust was added, cut small slits to allow steam to escape during baking.
- Bake to Perfection: Bake the pies in a preheated oven at 375°F (190°C) for 20 to 25 minutes, until the crust is puffed, golden, and the filling is bubbling. Allow pies to cool slightly before removing them from the pan.
Notes
- Use cold butter and chilled pastry for a flakier crust.
- Avoid overfilling to prevent soggy crusts and spills.
- Cut apples evenly for uniform cooking.
- Chill assembled pies in the fridge for 10 minutes before baking to help the crust hold its shape.
- Ensure oven temperature is accurate for consistent baking results.
