			Puff Pastry & Filling
- 1 sheet frozen puff pastry, thawed
- 8 oz fresh button or cremini mushrooms, finely chopped
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil or butter (for sautéing)
- 1/2 cup grated Parmesan or mozzarella cheese
- 1 tbsp fresh thyme leaves
- 1 tbsp fresh parsley, chopped
- Salt, to taste
- Black pepper, to taste
Finishing
- 1 beaten egg (for egg wash)
Instructions
- Prepare the Mushroom Filling: Finely chop mushrooms, onion, and garlic. Heat olive oil or butter in a skillet over medium heat. Sauté onion and garlic until translucent and fragrant. Add mushrooms and cook until moisture evaporates and mushrooms are tender and lightly browned. Season with salt, pepper, thyme, and parsley. Remove from heat and let cool.
- Roll Out the Puff Pastry: Thaw the puff pastry sheets according to package directions. On a lightly floured surface, roll out the pastry into an even rectangle to create a base for the filling.
- Add Cheese and Mushroom Mixture: Evenly sprinkle grated cheese over the pastry. Spread the cooled mushroom filling on top, leaving a small border along the edges.
- Roll and Slice the Pinwheels: Starting from the longer side, roll the pastry tightly into a log. Using a sharp knife, slice the roll into 1-inch thick pinwheels.
- Bake Until Golden: Arrange pinwheels spaced on a parchment-lined baking sheet. Brush the tops with beaten egg wash. Bake in a preheated oven at 400°F (200°C) for 15-20 minutes or until puffed and golden brown.
Notes
- Dry out mushrooms thoroughly to prevent soggy pastry.
- Keep puff pastry cold until ready to bake for best flakiness.
- Use a sharp knife to cut pinwheels cleanly without squashing.
- Do not overfill the pastry; keep a thin, even layer of filling.
- Use parchment paper on your baking sheet for easy cleanup and to prevent sticking.
