Old Fashion Coconut Pie

  • Author: Lina
  • Total Time: 3 hours (including chilling)
  • Yield: 8 slices 1x
  • Diet: Can be made gluten-free with gluten-free crust

Description

Old Fashion Coconut Pie is a classic Southern dessert featuring a rich, creamy coconut custard baked in a flaky, buttery crust. It perfectly balances the natural sweetness of coconut with smooth custard and a tender crunch, evoking warm, nostalgic feelings. This versatile pie can be enjoyed warm or chilled and is ideal for family gatherings or a comforting treat at home.

Ingredients

Scale

Pie Crust

  • 1 (9-inch) pre-made or homemade flaky buttery pie crust

Custard Filling

  • 1 1/2 cups sweetened shredded coconut (fresh or dried)
  • 3 large eggs
  • 3/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 1/2 cups evaporated milk or heavy cream
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare Your Pie Crust: Preheat your oven to 350°F (175°C). Roll out your pie crust and press it into a 9-inch pie dish, trimming the edges neatly. Blind bake the crust for 10 minutes to prevent sogginess when filled.
  2. Mix the Custard Filling: In a medium bowl, whisk together the eggs, sugar, salt, evaporated milk or cream, and vanilla extract until smooth. Stir in the shredded coconut until evenly distributed throughout the custard mixture.
  3. Combine and Bake: Pour the coconut custard filling into the partially baked pie crust, smoothing the top. Bake for 40-45 minutes or until the custard is mostly set but still slightly jiggly in the center.
  4. Cool and Chill: Remove the pie from the oven and let it cool completely on a wire rack. For best texture and ease of slicing, chill the pie in the refrigerator for at least 2 hours before serving.

Notes

  • Use fresh shredded coconut whenever possible for more vibrant flavor.
  • Do not overbake; the filling should remain slightly jiggly as it firms during cooling.
  • Blind bake the crust to keep it flaky and prevent sogginess.
  • Chill the pie before slicing for cleaner, neater pieces.
  • Using a glass pie plate helps monitor the crust browning to avoid overcooking.
