Instructions

  2. Mix Dough Ingredients: In a large bowl, combine the flour, salt, fresh thyme leaves, and chopped olives. Pour in the olive oil and the yeast mixture, then stir together until a sticky dough forms.
  3. Knead the Dough: Transfer the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic, developing gluten for a good rise.
  4. First Rise: Place the dough in a greased bowl, cover with a towel or plastic wrap, and let it rise in a warm spot for 1 to 1.5 hours, until doubled in size.
  5. Shape the Loaf: Gently punch down the dough to release air pockets, shape into a round or oval loaf, and place on a parchment-lined or floured baking sheet.
