Ingredients

Scale

Flatbread Base

  • 1 store-bought or homemade flatbread (thin for crispiness)

Toppings

  • 2 ripe Bartlett or Bosc pears, thinly sliced
  • 4 ounces Gorgonzola cheese, crumbled
  • 1 tablespoon fresh thyme or rosemary, finely chopped
  • 1 tablespoon extra-virgin olive oil
  • 1/4 cup fresh arugula leaves
  • 1/4 cup toasted walnuts or pecans, roughly chopped
  • 1 tablespoon honey (for drizzling)

Instructions

  1. Prepare the Flatbread Base: Preheat your oven to 400°F (200°C). Place the flatbread on a baking sheet lined with parchment paper to ensure even crisping. Ensure the flatbread is thin enough to crisp without becoming too hard.
  2. Slice the Pears Thinly: Wash and core the pears, then slice into thin, even pieces to allow them to soften slightly during baking but retain texture.
  3. Assemble the Toppings: Lightly drizzle the olive oil over the flatbread base to prevent drying. Arrange the pear slices evenly over the flatbread, then crumble the Gorgonzola cheese generously on top. Sprinkle the chopped fresh thyme or rosemary over it.
  4. Bake Until Golden: Bake in the preheated oven for 12-15 minutes until the cheese is melted and bubbly and the crust turns a golden brown. Watch closely to avoid burning, as the cheese can brown quickly.
  5. Add Finishing Touches: Remove from the oven and immediately scatter fresh arugula and toasted walnuts over the flatbread. Drizzle with honey to bring all the flavors together. Slice and serve warm for best taste.

Notes

  • Choose ripe but firm pears to avoid mushy texture after baking.
  • Lightly toast walnuts or pecans beforehand for enhanced aroma and crunch.
  • Avoid overloading the flatbread to maintain crispiness.
  • Use room temperature cheese for smooth, even melting.
  • Fresh thyme or rosemary elevates flavor more than dried herbs.
