Ingredients

Scale

Pork Chops

  • 4 bone-in pork chops, about 1-inch thick
  • Salt, to taste
  • Black pepper, to taste

Searing and Sauce

  • 2 tablespoons butter
  • 1 tablespoon oil (vegetable or olive oil)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 8 oz fresh sliced mushrooms
  • 2 tablespoons all-purpose flour (or gluten-free flour for gluten-free option)
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
  • Additional salt and pepper, to taste

Instructions

  1. Prepare the Pork Chops: Pat your pork chops dry with paper towels to ensure a nice sear. Season both sides generously with salt and pepper to build the foundational flavor for your Pork Chop Supreme.
  2. Sear the Pork Chops: Heat butter and oil in a large skillet over medium-high heat. Once hot, sear the pork chops for 3-4 minutes on each side until golden brown and slightly crispy. Remove from the pan and set aside to rest.
  3. Sauté the Aromatics: In the same skillet, add diced onions and minced garlic. Cook until translucent and fragrant, using the browned bits left from the pork to build deeper flavor in the sauce.
  4. Cook the Mushrooms: Add sliced mushrooms to the skillet and cook until they release their moisture and turn golden brown, adding earthiness and meaty texture to the sauce.
  5. Make the Sauce: Sprinkle flour over the mushroom mixture and stir for one minute to eliminate any raw flour taste. Gradually whisk in chicken broth until the sauce begins to thicken. Stir in heavy cream and thyme, then let simmer gently to develop a creamy, velvety texture.
  6. Finish Cooking the Pork Chops: Return the pork chops to the skillet and spoon sauce over them. Reduce heat to low, cover, and cook for 5-7 minutes until the internal temperature reaches 145°F, ensuring the chops are cooked through but remain juicy.

Notes

  • Let pork chops rest at room temperature for 15 minutes before cooking to promote even cooking.
  • Do not overcrowd the pan; cook chops in batches if needed to maintain a good sear and avoid steaming.
  • Use a meat thermometer to check that pork chops reach 145°F internal temperature for safe, juicy results.
  • Allow the chops to rest after cooking to lock in juices.
  • Deglaze the pan thoroughly to scrape up flavorful browned bits for a richer sauce.
