Ingredients

Scale

Dry Ingredients

  • 2 cups rolled oats
  • 1/2 cup chopped almonds
  • 1/2 cup chopped pecans
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp ground cloves

Wet Ingredients

  • 1/4 cup pure pumpkin puree
  • 1/4 cup maple syrup
  • 3 tbsp melted coconut oil
  • 1 tsp vanilla extract

Instructions

  1. Preheat and Prepare: Set your oven to 325°F (160°C) and line a large baking sheet with parchment paper to prevent sticking and make cleanup a breeze.
  2. Mix the Dry Ingredients: In a large bowl, combine the rolled oats, chopped nuts, and all the pumpkin pie spices (cinnamon, nutmeg, ginger, and cloves). Whisk together to evenly distribute the cozy flavors.
  3. Combine the Wet Ingredients: In a separate bowl, whisk together the maple syrup, pumpkin puree, melted coconut oil, and vanilla extract until smooth and fully blended.
  4. Bring It All Together: Pour the wet ingredients over the dry oat mixture and stir until every oat and nut cluster is evenly coated with the delicious spiced mixture.
  5. Bake Slowly: Spread the granola mixture in an even layer on the prepared baking sheet. Bake for about 25-30 minutes, stirring every 10 minutes to ensure even toasting without burning.
  6. Cool and Store: Once the granola is golden and fragrant, remove it from the oven and allow it to cool completely on the baking sheet. This cooling process helps the crunchy clusters form perfectly.

Notes

  • Spread granola in a thin, uniform layer for the crispiest texture.
  • Stir every 10 minutes during baking to prevent burning and ensure even toasting.
  • Let granola cool completely before storing to maintain crunchiness.
  • Use fresh, quality spices for stronger aroma and better flavor.
  • Add nuts or dried fruits after baking to avoid sogginess.
