Ingredients

Scale

Natural Purple Coloring

  • 1 cup purple sweet potato puree or 2 tablespoons ube extract

Dry Ingredients

  • 2 1/2 cups all-purpose flour (or gluten-free flour blend for gluten-free version)
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Wet Ingredients

  • 1 cup unsalted butter, softened (or vegetable oil – 3/4 cup)
  • 1 3/4 cups granulated sugar
  • 3 large eggs (or 3 flax eggs for vegan version)
  • 1 cup buttermilk or yogurt (or plant-based milk/coconut milk for vegan or tropical version)
  • 2 teaspoons vanilla extract

Instructions

  1. Prepare Your Purple Ingredient: Begin by steaming and mashing purple sweet potatoes until smooth, or measure out the ube extract, ensuring a smooth consistency that blends well with the batter.
  2. Mix Dry Ingredients: Whisk together the flour, baking powder, baking soda, and salt in a large bowl to evenly distribute the leavening agents and prevent any clumping.
  3. Cream Butter and Sugar: Beat the softened butter and sugar together until light and fluffy to incorporate air and ensure even sweetness throughout the cake.
  4. Add Eggs and Vanilla: Incorporate the eggs one at a time into the butter-sugar mixture, then stir in the vanilla extract for aroma and flavor enhancement.
  5. Combine Purple Puree and Buttermilk: Mix the purple sweet potato puree or ube extract with buttermilk (or dairy alternatives), then add this mixture alternately with the dry ingredients to the creamed mixture. Mix gently to maintain a smooth batter without overmixing.
  6. Bake: Pour the batter evenly into prepared pans and bake at 350°F (175°C) for 30-35 minutes, or until a toothpick inserted in the center comes out clean to ensure proper doneness without drying the cake.
  7. Cool and Frost: Allow the cake layers to cool completely on wire racks before frosting with your choice of frosting, such as classic cream cheese frosting or buttercream.

Notes

  • Use fresh purple sweet potatoes or high-quality ube extract for the most vibrant color and authentic flavor.
  • Mix the batter just until combined to prevent a tough crumb.
  • Bring all ingredients to room temperature before mixing for best texture.
  • Use an oven thermometer to maintain accurate baking temperatures and prevent overbaking.
  • Divide batter evenly between pans using a scale for symmetrical layers.
