Reuben Crescent Bake

Reuben Crescent Bake

Reuben Crescent Bake is a warm and savory casserole that layers tender corned beef, tangy sauerkraut, creamy Thousand Island dressing, and melty Swiss cheese inside flaky crescent dough. Easy to prepare and perfect for family dinners, brunch, or gatherings, this recipe offers all the classic Reuben sandwich flavors with minimal effort and maximum comfort.

Ingredients

Main Ingredients

  • Thinly sliced or chopped corned beef – about 12 oz
  • Drained sauerkraut – 1 cup
  • Shredded or sliced Swiss cheese – 1 to 1 1/2 cups
  • Thousand Island dressing – 1/2 cup
  • Crescent dough sheets (pre-made) – 2 sheets or equivalent to cover dish twice

Optional Ingredients

  • Butter – 1 to 2 tablespoons, melted (for brushing)
  • Caraway seeds – 1 teaspoon (for sprinkling on top)

Instructions

  1. Prepare the ingredients: Drain the sauerkraut thoroughly and pat it dry to remove excess moisture. Chop or slice the corned beef into bite-sized pieces, and shred or slice the Swiss cheese so it is ready to use.
  2. Assemble the layers: Unroll the crescent dough into a greased baking dish, pressing it gently to cover the bottom and sides. Spread a thin, even layer of Thousand Island dressing over the dough base. Then layer half of the corned beef, half the sauerkraut, and half the Swiss cheese over the dressing.
  3. Add the second layer: Repeat the layering with the remaining corned beef, sauerkraut, and Swiss cheese. Drizzle additional Thousand Island dressing over the top. Carefully cover the filling with another layer or fold of crescent dough to seal in the ingredients.
  4. Brush and bake: If desired, brush the top crescent dough with melted butter and sprinkle with caraway seeds for extra flavor. Bake in a preheated oven at 350°F (175°C) for 25 to 30 minutes, or until the dough is golden brown and fully cooked.
  5. Cool and serve: Allow the bake to cool for a few minutes before slicing to help the layers set and make serving easier.

Notes

  • Drain sauerkraut very well to avoid soggy layers.
  • Distribute ingredients evenly for balanced flavors in every bite.
  • Use quality freshly sliced deli corned beef for best taste and tenderness.
  • Monitor baking time carefully to keep dough flaky rather than dry.
  • Let the bake rest before slicing to help it hold its shape.
