Instructions

  1. Brown the Sausage: Heat olive oil in a large pot over medium heat. Crumble in the Italian sausage and cook until browned and cooked through, about 5-7 minutes. Remove the sausage with a slotted spoon and set aside to prevent overcooking later.
  2. Sauté the Veggies: In the same pot, add chopped onion, carrots, and celery. Cook until softened and fragrant, about 5 minutes. Stir in minced garlic and cook for another minute to release its aroma.
  3. Add Lentils and Broth: Pour in the rinsed brown lentils, diced tomatoes, chicken or vegetable broth, bay leaves, and dried thyme. Stir everything together and bring to a gentle boil.
  4. Simmer and Season: Reduce heat to low, cover the pot, and let the soup simmer for 30-40 minutes, or until the lentils are tender. Season with salt and pepper to taste, stirring occasionally to prevent sticking.
  5. Add Sausage and Greens: Return the cooked sausage to the pot along with fresh spinach or kale, if using. Stir until the greens wilt, about 3-5 minutes. Remove bay leaves before serving.
