Ingredients

Scale

Beef and Seasoning

  • 3 to 4 pounds Beef Chuck Roast
  • 1 tablespoon Chili Powder
  • 1 teaspoon Cumin
  • Salt and Pepper to taste

Aromatics and Liquids

  • 1 large Onion, diced
  • 3 cloves Garlic, minced
  • 1 cup Tomato Sauce
  • 1 cup Beef Broth

Assembly

  • 8 to 10 Flour Tortillas, soft and pliable
  • 1 to 2 cups Cheddar or Monterey Jack Cheese, shredded
  • Fresh Cilantro for garnish (optional)
  • 1 Lime, cut into wedges for squeezing

Optional Additions

  • Diced Jalapeños or hot sauce for spice
  • Cooked Rice or Quinoa
  • Sliced Avocado
  • Diced Onions
  • Sour Cream
  • Fresh Lettuce, sliced Radishes, or crispy Tortilla Chips for crunch

Instructions

  1. Prepare the Beef: Trim excess fat from the beef chuck roast, then season it generously with salt, chili powder, cumin, and pepper to create a flavorful base for slow cooking.
  2. Sear the Meat: Heat a little oil in a heavy pot or Dutch oven over medium-high heat and sear the beef on all sides until browned, adding caramelized depth to the flavor.
  3. Add Aromatics and Liquid: Remove the beef temporarily, sauté diced onions and minced garlic in the same pot until soft and fragrant, then return the beef to the pot and add tomato sauce and beef broth. Stir to combine.
  4. Slow Cook the Beef: Cover the pot with a lid and simmer on low heat for 3 to 4 hours, or alternatively use a slow cooker on low, until the beef is tender and easily shredded.
  5. Shred and Season: Transfer the cooked beef to a cutting board and shred using two forks. Mix the shredded beef back into the cooking juices for a moist, flavorful filling.
  6. Assemble the Burritos: Warm the tortillas properly, then place a generous scoop of shredded beef in the center, add cheese and any optional toppings, fold tightly, and serve immediately or wrap for later.

Notes

  • Use quality beef chuck roast for the best tenderness and marbling.
  • Don’t skip searing the meat to enhance flavor complexity.
  • Slow cooking low and slow ensures juicy, shred-ready beef.
  • Warm tortillas wrapped in foil or in a dry skillet to keep them pliable.
  • Let shredded beef rest for a few minutes before assembling to absorb juices.
