- Prepare the Pastry: If using phyllo, gently layer the sheets, brushing each sheet with olive oil to prevent drying and to ensure flakiness. For puff pastry, roll out and cut into small squares suitable for assembling the pies.
- Assemble the Pies: Place a spoonful of the spinach and feta mixture onto each pastry sheet or square. Fold or roll the pastry around the filling and seal the edges firmly by pressing or crimping with a fork to prevent leakage during baking.
- Bake to Perfection: Arrange the assembled pies on a parchment-lined baking sheet. Brush the tops with beaten egg or olive oil for a golden and glossy finish. Bake in a preheated oven at 375°F (190°C) for 15-20 minutes or until the pastry is crisp and golden brown.
