Perfect for busy weeknights, it delivers a delicious balance of rich meat, aromatic garlic and ginger, and vibrant veggies, making for a comforting and satisfying homemade dinner that comes together in under 30 minutes.

Ingredients

Scale

Meat

  • 8 oz flank or sirloin steak, thinly sliced

Rice

  • 3 cups cooked day-old rice

Sauces and Oils

  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • 2 tbsp vegetable or canola oil for cooking

Vegetables

  • 1/2 cup diced bell peppers
  • 1/2 cup peas
  • 1/2 cup diced carrots
  • 2 green onions, chopped

Aromatics and Others

  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, minced
  • 2 large eggs, beaten
  • Salt and pepper to taste

Instructions

  1. Prepare the Steak: Season thinly sliced steak with salt and pepper. Heat 1 tablespoon of vegetable oil in a hot skillet over medium-high heat. Sear the steak slices until browned but still juicy, about 2-3 minutes per side. Remove steak from skillet and set aside.
  2. Cook the Aromatics: In the same skillet, add minced garlic and ginger. Sauté while stirring until fragrant, about 30 seconds, infusing the oil with their flavors.
  3. Add Vegetables: Add diced bell peppers, carrots, and peas to the skillet. Stir-fry the vegetables until tender-crisp, approximately 3-4 minutes, maintaining their vibrant color and texture.
  4. Scramble the Eggs: Push the cooked vegetables to one side of the skillet. Pour beaten eggs into the empty space and gently scramble until mostly cooked but still moist.
  5. Combine Rice and Sauce: Add the chilled day-old cooked rice to the skillet. Break apart any clumps using a spatula. Drizzle soy sauce and sesame oil evenly over the mixture. Stir everything together to blend the flavors and warm the rice through.
  6. Return Steak to Pan and Toss: Return the seared steak to the skillet. Stir gently to incorporate the meat evenly throughout the fried rice. Cook together for another 1-2 minutes to meld flavors and heat through.
  7. Finish with Green Onions: Sprinkle chopped green onions on top as a fresh garnish. Give the rice a final gentle toss, then remove from heat and serve immediately.

Notes

  • Use day-old rice to avoid soggy or sticky fried rice; fresh rice should be cooled and dried before cooking.
  • Cook over medium-high to high heat to achieve a good sear and smoky aroma.
  • Prepare all ingredients before cooking since the process is fast.
  • Thinly slice steak against the grain for tender results and quick cooking.
  • Do not overcrowd the skillet; cook in batches if necessary for better browning.
