Description

Sticky Beef Noodles is a delicious and comforting dish featuring tender, thinly sliced beef and chewy fresh noodles coated in a rich, savory, and slightly sweet umami sauce. Quick and easy to prepare, this recipe is perfect for weeknight dinners or impressing guests, offering bold balanced flavors and a sticky texture that clings to every bite.

Ingredients

Scale

Beef

  • 250g thinly sliced flank or sirloin beef

Noodles

  • 200g fresh egg noodles or fresh chow mein noodles

Sauce

  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp brown sugar
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 50ml water or broth (optional to loosen sauce)

Other Ingredients

  • 1 tsp cornstarch (for marinade)
  • 1 tbsp cornstarch (for sauce slurry)
  • 2 tbsp vegetable oil (for stir-frying and coating noodles)
  • 1 pinch brown sugar (for marinade)
  • 2 green onions or scallions, sliced (for garnish)

Instructions

  1. Prepare the Beef: Slice the beef thinly against the grain for tenderness. In a bowl, marinate with a splash of soy sauce, 1 teaspoon cornstarch, and a pinch of brown sugar. Set aside briefly to tenderize and absorb flavors.
  2. Cook the Noodles: Bring a large pot of water to a boil and cook the noodles according to package instructions. Drain and toss with a little vegetable oil to prevent sticking.
  3. Make the Sauce: In a small bowl, combine soy sauce, oyster sauce, brown sugar, minced garlic, grated ginger, and optionally water or broth to loosen. Set aside.
  4. Stir-Fry the Beef: Heat vegetable oil in a large pan or wok over medium-high heat. Quickly stir-fry the marinated beef until browned but still juicy, about 2-3 minutes. Remove and set aside.
  5. Combine and Thicken: Using the same pan, add the sauce mixture and bring to a simmer. Mix 1 tablespoon cornstarch with cold water to create a slurry and slowly stir into the sauce to thicken. Return the beef to the pan and toss to coat evenly.
  6. Add Noodles and Finish: Gently fold in the cooked noodles, stirring just enough to combine without breaking them. Heat through so the noodles absorb the sticky sauce completely.

Notes

  • Use room-temperature beef for quick, tender cooking.
  • Do not overcrowd the pan; stir-fry beef in batches if necessary.
  • Prepare the sauce ahead of time to streamline cooking and balance flavors.
  • Lightly coat noodles with oil to prevent clumping and ensure sauce clings well.
  • Add the cornstarch slurry gradually to control sauce thickness and achieve perfect stickiness.
  • Handle noodles gently when mixing to avoid breakage.
