Description

This Stuffed Meatloaf Roll recipe combines a tender and juicy meatloaf wrapped around a savory, flavorful filling of cheese and vegetables. It offers a comforting yet elegant meal that is customizable, family-friendly, and perfect for impressing guests with its beautiful rolled presentation.

Ingredients

Scale

Meatloaf Base

  • 1 lb ground beef
  • 1 cup breadcrumbs (or gluten-free breadcrumbs)
  • 2 eggs, beaten
  • 1/2 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp pepper

Filling

  • 1 cup shredded mozzarella or cheddar cheese
  • 1/2 cup chopped spinach or diced bell peppers
  • Optional: herbs (parsley, basil) for garnish
  • Optional: ketchup or tomato sauce for glazing or mixing

Instructions

  1. Prepare the Meat Mixture: In a large bowl, combine the ground beef, breadcrumbs, beaten eggs, finely chopped onions and garlic, Worcestershire sauce, salt, and pepper. Mix gently with your hands or a spoon until just combined to avoid a dense texture.
  2. Roll Out the Meat Base: On a large piece of parchment paper or a baking mat, press the meat mixture into a roughly 9×12 inch rectangle about half an inch thick. This will form the base that you’ll roll your filling into.
  3. Add the Filling: Spread your chosen filling evenly over the meat rectangle, making sure to leave a small border around the edges to prevent the filling from spilling out during rolling. Layer cheese, vegetables, herbs, or any preferred filling ingredients.
  4. Roll and Seal: Starting from one long edge, carefully roll the meatloaf into a tight log, using the parchment paper to help guide and hold the shape. Once rolled, pinch the seam and ends to seal the filling inside.
  5. Bake Until Perfect: Transfer the roll to a prepared baking dish and bake at 375°F (190°C) for about 45 to 55 minutes, or until the internal temperature reaches 160°F (71°C) and the meat is cooked through.
  6. Rest and Slice: Allow the Stuffed Meatloaf Roll to rest for 10 minutes before slicing. This step helps juices redistribute and keeps each slice intact with that luscious filling.

Notes

  • Keep it Moist: Avoid overmixing the meat mixture to prevent a tough texture.
  • Use Parchment Paper: Rolling on parchment makes it easier to shape and transfer the meatloaf.
  • Don’t Overstuff: Use a moderate amount of filling to prevent leaks during baking.
  • Check Temperature: Use a meat thermometer to ensure perfect doneness without drying out.
  • Rest Before Slicing: Letting the roll rest helps keep it moist and presentable.
