Instructions

  1. Prep and season the roast: Pat the beef chuck roast dry and generously season all sides with salt, pepper, thyme, and rosemary to build flavor.
  2. Sear the meat (optional but recommended): Heat oil in a skillet over medium-high heat and sear the roast on all sides until golden brown to lock in juices and enhance flavor. This step can be skipped to save time.
  3. Place vegetables in the crock pot: Layer chopped carrots, potatoes, and onions evenly at the bottom of the slow cooker to soak up the meat juices and add sweetness.
  4. Add the roast and broth: Set the seared or unseared roast on top of the vegetables, then pour beef broth over everything to keep the roast moist and create the base for the gravy.
  5. Slow cook low and slow: Cover and cook on low for about 8 hours, or on high for 4-5 hours, until the roast is fork-tender and the vegetables are soft.
  6. Make the gravy: Remove the roast and vegetables. Strain the cooking liquid if desired. Whisk in a flour or cornstarch slurry gradually while warming off heat until the gravy thickens to a smooth, rich consistency.
