Instructions

  1. Prepare your ingredients: Finely chop the onion, mince the garlic, and thinly slice the cabbage. Dice jalapeño or green chile if using. Having ingredients ready before heating the skillet helps keep cooking smooth and fast.
  2. Brown the ground beef: Heat olive oil in a large skillet over medium-high heat. Add ground beef, breaking it up with a wooden spoon, and cook until browned and fully cooked. Drain excess fat if needed.
  3. Sauté aromatics and spices: Add chopped onion, garlic, and optional jalapeño to the skillet. Stir and cook until softened and fragrant, about 3 to 4 minutes. Sprinkle in chili powder, cumin, paprika, oregano, salt, and pepper. Stir to coat evenly.
  4. Add cabbage and tomato paste: Toss sliced cabbage into the skillet, mixing well to coat with beef mixture. Stir in tomato paste to bind flavors and add depth. Cook 5 to 7 minutes, stirring occasionally, until cabbage softens but remains slightly crisp.
  5. Finish and serve: Give skillet a final stir, taste and adjust seasoning if needed. Turn off heat and serve hot, with optional toppings and sides as preferred.
