Instructions

  1. Prepare your ingredients: Slice the mushrooms evenly for consistent cooking. Mince the garlic and chop the green onions or chives. Bring a large pot of salted water to a boil for the pasta.
  2. Cook the pasta: Cook the pasta al dente according to package instructions. Before draining, reserve about 1 cup of pasta water to adjust the sauce consistency later.
  3. Sauté the mushrooms and garlic: Heat olive oil in a large skillet over medium heat. Add the sliced mushrooms and sauté until golden and most moisture has evaporated, about 6–8 minutes. Add minced garlic and cook for an additional minute until fragrant.
  4. Make the creamy miso sauce: Lower the heat and stir in the cream. In a small bowl, whisk the miso paste with a bit of warm reserved pasta water until smooth, then add this mixture to the skillet. Stir well to combine and create a creamy sauce that coats the mushrooms.
