Ingredients
Scale
Chicken
- Boneless, skinless chicken breasts or thighs (about 4 pieces)
- 2 tablespoons olive oil
- 1 tablespoon lemon juice (for marinating)
- 2 garlic cloves, minced (for marinating)
- Salt and pepper, to taste
Green Goddess Sauce
- 1 cup fresh parsley leaves
- 1/4 cup fresh tarragon leaves
- 1/4 cup fresh chives
- 1/4 cup fresh basil leaves
- 2 tablespoons lemon juice
- 2 garlic cloves
- 1/2 cup Greek yogurt or mayonnaise
- 2 tablespoons olive oil
- 1 teaspoon anchovy paste (optional)
- Salt and pepper, to taste
Instructions
- Prepare the Green Goddess Sauce: In a blender or food processor, combine parsley, tarragon, chives, basil, lemon juice, garlic, Greek yogurt or mayonnaise, olive oil, and anchovy paste if using. Blend until smooth and creamy. Season with salt and pepper to taste. Chill the sauce to allow flavors to meld.
- Marinate the Chicken: Drizzle chicken pieces with olive oil and season with salt and pepper. Toss with lemon juice and minced garlic for extra flavor. Let it marinate briefly while preparing the grill.
- Preheat the Grill: Heat your grill or grill pan over medium-high heat until hot enough to produce grill marks and retain chicken juiciness.
- Grill the Chicken: Place chicken on the grill and cook for 5-7 minutes per side, depending on thickness, until the internal temperature reaches 165°F (75°C). Remove from grill and allow the chicken to rest for a few minutes.
- Serve with Green Goddess Sauce: Slice the grilled chicken and drizzle generously with the chilled Green Goddess sauce. Garnish with extra fresh herbs if desired, and enjoy.
Notes
- Use room temperature chicken for more even cooking.
- Letting the chicken rest after grilling preserves juiciness and flavor.
- Fresh herbs significantly enhance the brightness of the sauce.
- Adjust sauce consistency with a splash of water or lemon juice if too thick.
- Test grill temperature by holding your hand an inch above it; if you can hold it only a couple of seconds, it’s ready.
